- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 3 carrots peeled and sliced
- 1 onion diced
- 2 potatoes peeled and cubed
- 1 tablespoon grated ginger
- 2 cloves garlic minced
- 2 tablespoons gluten-free curry powder
- 1 teaspoon garam masala
- 2 cups gluten-free chicken broth
- 1 apple grated
- 2 tablespoons gluten-free soy sauce
- 2 tablespoons ketchup
- Cooked rice or gluten-free noodles for serving
In a large pot or Dutch oven, heat some oil over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
In the same pot, add the carrots, onion, potatoes, ginger, and garlic. Cook until the vegetables are slightly softened.
Add the curry powder and garam masala to the pot and stir to coat the vegetables.
Pour in the chicken broth, grated apple, soy sauce, and ketchup. Stir well to combine.
Return the chicken to the pot and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 30 minutes, or until the chicken is cooked through and the flavors have melded together.
Serve the gluten-free Japanese curry chicken over cooked rice or gluten-free noodles.
