Gluten Free Japanese Curry Chicken (Curry House Copycat)

Ingredients
  

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 carrots peeled and sliced
  • 1 onion diced
  • 2 potatoes peeled and cubed
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced
  • 2 tablespoons gluten-free curry powder
  • 1 teaspoon garam masala
  • 2 cups gluten-free chicken broth
  • 1 apple grated
  • 2 tablespoons gluten-free soy sauce
  • 2 tablespoons ketchup
  • Cooked rice or gluten-free noodles for serving

Instructions
 

  • In a large pot or Dutch oven, heat some oil over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  • In the same pot, add the carrots, onion, potatoes, ginger, and garlic. Cook until the vegetables are slightly softened.
  • Add the curry powder and garam masala to the pot and stir to coat the vegetables.
  • Pour in the chicken broth, grated apple, soy sauce, and ketchup. Stir well to combine.
  • Return the chicken to the pot and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 30 minutes, or until the chicken is cooked through and the flavors have melded together.
  • Serve the gluten-free Japanese curry chicken over cooked rice or gluten-free noodles.
