Delicious Cabbage Roll Soup

Hearty, healthy cabbage roll soup.

Ingredients
  

  • 1 lb beef or turkey or vegetarian substitute
  • 1 large onion
  • 2 cups of tomato sauce
  • 4 cups of beef broth
  • 4 cups water
  • 2 tbsp of brown sugar
  • 2 tbsp pepper
  • Pinch of salt
  • 2 tbsp of minced garlic
  • 4 cups of chopped green cabbage
  • 3 carrots peeled and sliced
  • 2 Bay Leaves

Instructions
 

  • In a LARGE pot, add some olive oil and brown the ground beef (turkey, vegetarian substitute)
  • Add salt and pepper and cook till brown
  • Add the garlic, onion and carrots and cook another 5 minutes
  • Now add the tomato sauce, beef broth, brown sugar, cabbage and bay leaves. Stir and turn up the heat
  • Bring to a low boil, reduce and simmer for about 30 minutes.
  • At the same time, cook some rice according to package directions, in a separate pot.
  • When it comes time to eat, place 2 or 3 spoons of cooked rice into the bottom of the bowl and top off with a couple of ladles of soup.
  • (Why cook the rice separately? There will likely be left-overs, and the rice tends to swell, turning the whole meal into a thick paste. So cook and store the rice separately and combine at dinner time)
