Anyone who knows me, knows that I love my comfort food. Potatoes, pasta, steaks and breads are the way to my heart. I love this easy recipe for a potato casserole, which combines simple ingredients like cheddar cheese, juicy kielbasa sausage and hashbrowns into a delicious meal.

Casseroles are incredible recipes you can enjoy any time of year. During the cold winters, they are a great comfort dish that warms us up. During the summer, when we’d rather be enjoying the outdoors, the simple recipe helps save time and effort.

Plus, cooking in one pot means we get a full meal with less cleanup.

Make extra portions, and you can store leftovers in an airtight container and refrigerate for a few days.

Ingredients are few and simple for this slow cooker cheesy kielbasa hashbrown casserole. (By the way, ‘kielbasa’ is often pronounced ‘coo-bassa’).

Ingredients:

  • 1 32 oz bag of hash browns – Thawed and cubed
  • 16 oz. kielbasa sausage – cut into small pieces
  • 1 small onion, diced
  • â…“ cup butter – melted
  • 2½ – 3 cups shredded cheese optional to use a mix of Monterey Jack and Cheddar
  • 10.5 oz. can cream of chicken soup
  • 1 cup half and half or whole milk – preferably one of these for best consistency

Here are some potential substitutes for the above ingredients.

Instead of hash browns, you could use cubed fresh potatoes. Instead of the half and half or whole milk, you could use regular milk.

Try it with a sweet onion, or even red onions instead.

Add some spice with a dash of cayenne pepper, red pepper flakes or even a few dashes of your favorite hot sauce.

Instead of kielbasa, you could use any smoked sausage. And the soup could also be cream of mushroom soup of cream of celery soup. And the cheese could be just about any type of your favorite cheese.

Now, lets see how it all comes together.

Start by spraying the interior sides of the crock pot with cooking spray. This little prep work will save you a lot of time cleaning it up later. If you don’t have a can of ‘Pam’ handy, use olive oil or canola oil and a paper towel to rub the inside of the pot.

In the greased crock pot, combine hash browns, kielbasa, onion and 2 cups of the cheese and mix them together. Add any spices, such as cayenne or even onion powder or garlic powder and mix well.

Whisking ingredients together

In a separate bowl, combine cream of chicken soup, melted 1/3 cup of butter and milk. Wisk until smooth.

Pour this mixture over the dry ingredients which are patiently waiting in the slow cooker. Mix well until all ingredients are well coated.

Sprinkle the remaining cheese over everything.

Set the cooker to high for 3 hours and get ready to enjoy the cheesy goodness the entire house will appreciate.

If you’re prepping this meal in the morning, you could set the heat to medium and cook for 5 hours, or low and go for 7 to 8 hours.
